Well, polenta is kinda like grits, or at least that’s the texture, but thicker. You can get it in logs, which you can slice to make a sort of “cake” There’s a lot of different ways to cook it, you can even microwave it. I usually pan fry it with a little bit of olive oil. season it with salt & pep and place in pan and sear it off. Doesn’t take long at all about 6 or so minutes.
But if you’re starting it from it’s grain form (I dunno if it’s a grain, i’m going to assume it is and this is the internet so I’m sure someone will correct me if I’m wrong), then you mix the grain with the directed amount of water, add seasoning, and bake it for about an hour, at that point you can add other things (like cheese or herbs) and then bake for another half hour or until it’s not rising anymore. then let it cool. It’ll be pretty firm at that point.
You can top it with whatever, a lot of places top it with marinara sauce. The first time I had it It was topped with a stuffed portabella. In conclusion, polenta is good.
