So, this is the internet and I’m sure we all love avocado. But you know whats almost better than avocado? When it’s warm and that buttery-ness is just intensified. For a late night snack I made a baked egg. The bottom of the ramekin had a few slices of tomato, baby spinach, red onion, avocado, then cracked the egg, topped with cheese, tarragon, cilantro, and chili powder. Popped it in a 370F oven for about 10 minutes and enjoyed the hell out of that on top of some apple butter toast.
